Pistachio & Rose Helva Recipe | Woolworths

Bake a creamy and giftable treat, this Turkish Helva teat is studded with pistachio and decorated with rose petals!

Ingredients (Ten servings):

  • 385g jar hulled tahini

  • 385grams jar hulled tahini

  • 1/4 tsp salt

  • 1/4teaspoons salt

  • 1 3/4 cup caster sugar

  • 1 3/4 cup caster sugar

  • 1/2 cup unsalted pistachio kernels, finely chopped

  • 1/2 cup unsalted pistachio kernels, finely chopped

  • 2 tbs rose petals

Method:

  1. Grease and line a 11 x 21cm rectangular loaf pan with baking paper, allowing paper to overhang long sides for handles. Place tahini and salt in a large bowl.

  2. Place sugar and ½ cup water in a medium heavy-based saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Increase heat and bring to the boil. Boil, without stirring, for 3-4 minutes or until mixture thickens and is syrupy (or reaches 121°C on a candy thermometer) but does not colour. Remove from heat. Allow bubbles to subside.

  3. Quickly stir sugar syrup into tahini along with ¼ cup pistachio. Quickly transfer to prepared pan and smooth surface. Top with remaining pistachio and rose petals. Refrigerate for 2 hours or until firm. Cut into slices to serve.
