Bake your own Lamingtons!

Sponge Cake Ingredients:

  • 3 eggs

  • 1/2 cup butter

  • 1/2 cup castor sugar

  • 1 teaspoon vanilla essence

  • 1 cup self-raising flour

  • 1/2 cup milk

Chocolate Icing Ingredients:

  • 4 cups icing sugar

  • 1/3 cup cocoa

  • 2 tablespoons butter

  • 1/2 cup milk

  • 4 tablespoons boiling water

  • 3 cups desiccated coconut

Instructions:

Making the Sponge Cake:

  1. Preheat your oven to 180°C.

  2. Beat the eggs well, gradually adding the sugar until dissolved.

  3. Add the milk and vanilla essence.

  4. Stir in the self-raising flour and whip the butter into the mixture.

  5. Pour the mixture into a cake tin or lamington baking dish.

  6. Bake for 35 minutes.

  7. Let the cake cool for at least 10 minutes, then refrigerate for 24 hours.

Preparing the Chocolate Icing:

  1. Mix the cocoa and icing sugar in a large bowl.

  2. Add the milk, butter, and boiling water.

  3. Warm the mixture over low heat until smooth and creamy.

Assembling the Lamingtons:

  1. Cut the sponge cake into 5cm x 5cm squares.

  2. Using a fork or skewer, dip each square into the chocolate mixture, making sure it’s well coated.

  3. Roll each square in desiccated coconut.

  4. Let the lamingtons cool on a wire rack for a few hours.
